Let's get started.

Margherita pizza

STEP 1

Mix the flour, yeast, oil, water, and salt in a bowl until you get a soft, wet dough. Knead it in a mixer or by hand, lifting the dough as you work it, until it is smooth - about 10 minutes. Make sure you do not add more flour until the dough is still very soft when you finish kneading. Place in a bowl, cover, and let rise for 3 hours. Heat the oven as hot as possible and place a pizza stone or heavy baking sheet inside the pizza oven.

STEP 2

Put the tomatoes in a pan and cook them over high heat until the juice thickens and the tomatoes are no longer watery (break them up if they are whole). Remove the tomatoes from the heat, stir in the garlic and basil, and season.

STEP 3

Divide the dough into 2 or 4 pieces and knead briefly so you don't squash out too much air. Roll and stretch out each group as much as you can to form a large pizza base -- the thinner the dough, the crispier the base will be.

STEP 4

Drizzle the base with 2 tbsp olive oil and spread over some tomato sauce. Carefully lift onto the hot baking sheet or pizza stone (dusted with semolina or polenta to stop it sticking). Scatter with mozzarella and drizzle more oil, then cook for 10-12 minutes or until the crust is crisp and browned. Add more fresh basil leaves and olive oil.

Flatbread Pizza

STEP 1

Preheat  pizza oven to 400°. In a large bowl, whisk to combine flour, baking powder, salt, and baking soda. Add yogurt and oil and mix until no dry spots remain.

STEP 2

Lightly flour a clean work surface. Transfer dough to surface and knead until smooth, 3 to 4 minutes, adding more flour if the dough is sticky.

STEP 3

Divide dough into 3 pieces, then roll each piece into 1/4" thick round. Heat a large skillet or griddle over medium-high heat and add enough vegetable oil to coat the bottom of the pan. Cook flatbreads until golden on both sides, about 2 minutes per side. Continue cooking flatbreads, adding more vegetable oil as needed.

STEP 4

In a medium bowl, combine tomatoes, red onion, oil, and oregano and season with salt and pepper. Top each flatbread with cheese, tomato-onion mixture and bake until cheese is melty, 15 minutes. Drizzle with balsamic glaze and top with arugula before serving.

BBQ Chicken Pizza

STEP 1

Preheat oven to 500°. Line two large baking sheets with parchment paper and grease with cooking spray. In a medium bowl, stir together chicken and 1/4 cup barbecue sauce.

STEP 2

On a lightly floured surface, roll out pizza dough into a large circle, then slide onto a prepared baking sheet. Top each pizza with 1/4 cup barbecue sauce, then half the chicken mixture, spreading in an even layer and leaving 1" around the edge bare. Next, add an even layer of mozzarella and red onion, then top with gouda. Sprinkle with crushed red pepper flakes if using. Bake until cheese is melty and the dough is cooked for 20 to 25 minutes. Garnish with cilantro before serving.
